13TH NOV 8.00 AM CET (3 PM SGT / UTC +8) – THE ENTREMET GLACÉ: PANDANUS, BY PASTRY CHEF OTTO TAY
Pastry Chef Otto Tay, a member of the Malaysian team that won the 2019 World Pastry Cup, will reveal his unique recipe of Entremet Glacé “PANDANUS” dedicated to celebrating the 5-year anniversary of Carpigiani Gelato Pastry University. The Chef will create in live streaming a fusion of Western pastry tradition and Southeast Asian sweet ingredients. The session will be presented by Pastry Chef Alessandro Racca, the technical director of Carpigiani Gelato Pastry University.

Pastry Chef Francesco Boccia, 2015 World Pastry Cup winner, will reveal his unique recipe of Entremet Glacé “FIVE SENSES”, specially conceived to celebrate Carpigiani Gelato Pastry University’s 5-year anniversary. The Chef will create in live streaming a unique expression of different consistencies and taste. The session will be presented by Pastry Chef Alessandro Racca, the technical director of Carpigiani Gelato Pastry University.
